A delicious Oreo Cookie pie designed to satisfy even those with the sweetest tooth.

What you need

  • 200g unsalted butter
  • 270g caster sugar
  • 1 large egg
  • 270g self-raising flour
  • 70g Good cocoa powder
  • Tsp Vanilla bean paste / Vanilla extract
  • 5-6 Oreos (I used Peanut Butter Oreos)
  • Reese's Pieces or Chocolate Chips
  • Nutella
  • 6-9" Cake Pan

Preheat the oven to 185°C.

Chop your butter into 1 inch cubes in a bowl and soften it in the microwave for a few seconds. Take out and transfer to a mixing bowl, then add in the sugar. Mix with a spoon or electric whisk until smooth and creamy. Crack in the egg and mix until fully incorporated. Add the flour, cocoa and vanilla extract. Mix well until a dough is formed. You may need a tiny splash of milk but you want quite a dry dough. Grease and stuff the pan with about a third of the cookie dough and press down and around the edges. Make sure you leave at least enough to cover the top of the pie - but you will likely have cookie dough left over (BONUS!!).

Microwave your Nutella for 45-60 seconds to soften, and lightly stir quickly with a spoon. Fill the centre well of the pie with Nutella, leaving a 2cm gap at the top. Loosely crush in your Oreos and Reese's Pieces on top of the Nutella. Take another hockey ball sized chunk of cookie dough and flatten it to the size of the top of your pie and press in. Stud the top of the pie with more chocolate chips and Reese's Pieces. Cook in the centre of the oven for 14-16 min or until cooked to your liking (I LOVE soft cookies!).

Once the pie is cooked, remove from the oven and allow to cool in the pan for 10min. If using a cake tin, use a smaller sized pot or bowl to slide the base out of the pan. If using a skillet or other pan you will need to ensure the cookie is cooked firm and be very careful removing it from the pan. I strongly recommend a cake pan for this reason.
